Earthquake Cake

My son's class is studying Earthquakes and Volcanos.

I might make this as the end of the unit surprise.
We can use an ice cream scoop and put the cake into those small plastic cups and they can eat with a spoon.  Maybe a scoop side of vanilla ice cream too?

Earthquake Cake

1 cup pecans, chopped
1 cup of coconut
1 German chocolate boxed cake mix
1 stick margarine
1 -- 8 oz. pkg. cream cheese
1 box confectioners sugar

Combine the 1 cup of pecans and 1 cup of coconut and put in the bottom of a 9 x 13 inch baking pan.

Mix the German chocolate cake as directed on the box.

Pour the cake mix over the coconut and nuts.

Melt the margarine and cream cheese over low heat.
Slowly stir in the entire box of confectioners sugar.

Drop spoonful dollops of cream cheese all over the top -- Do not spread.

Bake cake at 350 degrees for 45 minutes.
Let cool. Dig in!

Enjoy!

Any company you do business with on the list?
For me Verizon (but just was bought out in our area), Comcast, and we have Virgin Atlantic cell phones which are on the Sprint network but I have not a complaint.

Deadly Sins

I am giving Pastor Dave the gift of laughter with this post in his honor.  Now which one is he, #1, #2 or #3 (just joking)?  Blessings to you all.

Three pastors went to the pastor convention and were all sharing one room.

The first pastor said, "Let's confess our secret sins one to another.

"I'll start. my secret sin is I just love to gamble. When I go out of town, it's cha-ching cha-ching, let the machines ring."

The second pastor said, "My secret sin is that I just hate working. I copy all my sermons from those given by other pastors."

The third pastor said, "My secret sin is gossiping and, oh boy, I just can't wait to get out of this room!"

Home Rules

I got this little plaque at a yardsale with these words of wisdom on it.

If you sleep on it . . . make it up
If you wear it . . . hang it up
If you drop it . . . pick it up
If you eat from it . . . wash it
If you step on it . . . wipe it off
If you open it . . .  close it
If you empty it . . .  fill it up
If it rings . . . answer it
If it howls . . . feed it
If it cries . . . love it

I thought this was really a nice post in another blog so I am sharing with you.

There is no investment you'll ever make that will pay you so well as the effort to scatter sunshine and good cheer where ever you are.

The deepest principal in human nature is the craving to be appreciated.
If you treat an individual as if they were what they ought to be and could be,
they will become what they ought to be and could be.

Everyone thrives on being appreciated, loved and needed.
There is no stimulus like that which comes from the consciousness of knowing that others believe in you.

Applaud others when they run.
Console them when they fail.
And cheer them when they recover.

As water is to a flower,
so is praise to the heart of another.

The Serenity Prayer

Paula Deen was on Oprah (repeat show) and she said that this prayer helped her through the tough times.  I am posting this so that maybe it may help someone in need of hope.

The Serenity Prayer

God grant me the serenity to accept the things I cannot change, courage to change the things I can, and the wisdom to know the difference.
Living one day at a time, enjoying one moment at a time, accepting hardship as the pathway to peace.
Taking, as He did, this sinful world as it is, not as I would have it.
Trusting that He will make all things right if I surrender to His will; that I may be reasonably happy in this life, and supremely happy with Him forever in the next.
Amen.

Magnesium Deficiency

Could it be stealing your energy?

Stressed and tired?  If you have two or more of the from the following list, it could mean you have low magnesium levels and you should see a doctor.

Facts: More than 80% of women suffer from a lack of magnesium.
There is less magnisium in the soil where our vegetables grow.
Stress and sweating can flush out the mineral that was ingested.

Headaches/migraines/jaw pain

Brain fog/difficulty concentrating/racing thoughts

Constipation/bloat

Insomnia

High blood sugar

Severe PMS, menstrual cramps or menopausal symptoms

Urinary incontinence/bladder pain

Body-wide muscle and joint aches/restless muscles

Good book to read: The Magnesium Miracle by Carolyn Dean, M.D., N.D.  Check your library for a copy.

Source: First Magazine 8/20/07 page 29

Additional info:
"Low levels of magnesium can hasten hardening  of the arteries and double the risk of a heart attack." says James C. Roberts MD, co-author "Reverse Heart Attacks Now"
He mentioned that 75% of heart patients had a deficiency and that 400mgs per day in a chewable form is beneficial.

S'More Cookie Bars

Now that tBlog camp has ended for the season . . .

This is my favorite s'more -- special dark chocolate, marshmallows on cinnamon graham crackers.

Here is a S'More Cookie Recipe to make in your kitchen

Preheat oven at 350 degrees

3/4 cup of Imperial Spread/margarine (or your store brand)
3 cups of graham cracker crumbs (you can use cinnamon or chocolate)
1 - 6 oz package of semi-sweet chocolate chips (1 cup)
1 cup butterscotch chips (1 cup)
1 cup of mini marshmallows
1 can of sweetened condensed milk

In a 13 x 9 inch backing pan, combine the margarine with the crumbs.
Press to form an even layer.
Evenly sprinkle with chocolate chips then butterscotch chips then marshmallows.
Pour condensed milk evenly over mixture.

Bake at 350 degrees for 25 minutes or until bubbly.
Cool completely on a wire rack.
Cut into squares.
For easier cutting, refrigerate for one hour then cut.

Makes 2 dozen bars.  Great for a bake sale.
