Swedish Apple Pie and Apple Crisp

 A couple of easy and tasty apple recipes.

Tip: Good cooking or baking apples are Golden Delicious, Newton Pippin, Granny Smith, Rhode Island Greening, Jonathan, and Jonagold, Winesap, Baldwin, MacIntosh, Gravenstein, Gala, Fuji, Red Delicious
Each type of apple can equal a different type of taste.

I use an apple cutting tool to cut all my apples up. It is round and slices them into even wedges and you just remove the core from the center circle. Very fast and easy way to cut an apple. You can find this in the kitchen gadget section.

Swedish Apple Pie

1 egg

¾ cup of brown sugar (light or dark)

1 cup of diced apples

½ cup of chopped nuts (I use cashews.)

½ cup of flour

1 teaspoon of vanilla

a pinch of salt

Beat the egg, add the sugar.
Mix well and gradually add remaining ingredients.

Combine thoroughly.

Pour the batter into a greased 9 inch pie plate.

Bake at 350 for about 30 minutes.
Let cool.

Cut into 6 wedges.
Can be served with vanilla ice cream.

Apple Crisp

4 cups of sliced tart apples (about 4 medium)

2/3 to ¾ cup of packed brown sugar

½ cup of all-purpose flour (or self rising flour)

½ cup of oats (regular oatmeal will do not instant)

1 teaspoon of ground cinnamon (more if you wish)

¾ teaspoon of ground nutmeg

1/3 cup of butter or magerine softened

Heat oven to 375 degrees.

Arrange sliced apples in a greased 9 or 10 inch pie plate.

Mix remaining dry ingredients and butter or margerine.

Sprinkle mixture over the apples.

Bake for about 30 minutes.

Serves 6.

Old traditions: If you peel an apple, peel it so that the peel is one continuous strip (Like Mrs. Moffat did so often in The Moffat series by Eleanor Estes.). Take the apple peel strip and throw it over your left shoulder without looking. Notice how it lands, what letter shape does it look like? Well that is the first name intial of the person you will marry!

Place an apple under your pillow, and you will see your future spouse in your dreams!

I knew about the tradition, I just found the poem that goes with it. Sorry I was late but you now have something to look forward to next year.

Remember you can always put an apple under your pillow for a sneak preview.
